  6. 10 tomatillos diced, peel off the outer wrapper, if they have one
  7. 4 cloves garlic minced
  8. 2 teaspoons kosher salt
  9. 2 teaspoons cumin
  10. 2 teaspoons sage
  11. 1 tablespoon oregano
  12. 1/2 teaspoon red pepper flakes or more, to taste
  13. 1/4 cup cilantro leaves chopped
